Directions
1. Step
Microwave ¼ block of tofu for 3 minutes to remove excess moisture. Place a cloth or paper towel over the tofu to further drain the water.
2. Step
In a mixing bowl, combine ½ bowl of rice with the prepared tofu. Add a pinch of salt, a drizzle of sesame oil, and a sprinkle of sesame seeds. Mix thoroughly.
3. Step
Drain canned tuna using a strainer. In a bowl, mix the tuna with 2 tablespoons of mayonnaise, a pinch of chili powder, and chopped Cheongyang red pepper (if desired).
4. Step
Cut a sheet of seaweed in half. Place one half on a clean surface and spread the tofu-rice mixture evenly over it. Layer another piece of seaweed on one side. Add perilla leaves, fried kimchi, 5 crab sticks, and a spoonful of the tuna mixture. Roll the Kimbap tightly, starting from the top and sealing with a bit of water.
5. Step
Lightly oil a frying pan and cook the Spam slices and beaten egg until golden. Set aside the fried kimchi and cooked Spam.
6. Step
Layer 2 lettuce leaves on a seaweed sheet. Add the cooked Spam, half the beaten egg, fried kimchi, and a spoonful of the tuna mixture. Roll the Kimbap tightly, securing the ends.
