Directions

1. Step

Cut the sweet potato into 3 pieces. Place the pieces in a pan, add water, and cover with a lid. Boil on medium heat for 15–20 minutes. After 20 minutes, remove the lid, add more water, and cover again. Continue cooking for another 5 minutes.

Remove the sweet potato from the pan and let it cool for 5 minutes. Peel the skin with your hands and mash the sweet potato with a slotted spoon. Add 2 tablespoons of milk, a drizzle of honey, and mix thoroughly. If desired, add chopped almonds and mix well.

3. Step

Preheat a nonstick pan on low heat. Sprinkle 1 teaspoon of mozzarella cheese in the pan for each patty. Place 4 teaspoons of the sweet potato mixture on top of the cheese for each patty. Sprinkle another teaspoon of cheese on top of each. Once the cheese begins to melt slightly, gently flatten the sweet potato mixture with a spoon. Fry the patties until they are golden brown on both sides.
