Directions
1. Step
Prepare the strawberries by washing and cutting them into halves. Set aside.
2. Step
In a mixing bowl, beat the eggs, sugar, vanilla extract, and a pinch of salt together for 3-4 minutes until the mixture is light and fluffy. Gradually add the vegetable oil and milk, mixing well after each addition.
3. Step
Sift in the flour and baking powder. Begin mixing the batter with a whisk, then switch to a mixer for a smoother consistency.
4. Step
Pour the batter into a greased or parchment-lined 19x28 cm baking dish. Level the surface with a spatula. Arrange the halved strawberries evenly over the top of the batter, then sprinkle with coconut shavings.
5. Step
Bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until a toothpick inserted in the center comes out clean.
6. Step
Remove the cake from the oven and let it cool slightly. Dust with powdered sugar, slice into squares, and serve.
