Directions

  1. In a bowl, mix the egg, 40 grams of sugar, 1 pinch of vanilla, 1 teaspoon of salt, and 25 ml of vegetable oil. Gradually add 150 grams of flour to the mixture and stir until well combined. Once mixed, knead the dough by hand, adding a little extra flour if needed to achieve the right consistency.

  2. In a separate bowl, combine 250 grams of cottage cheese (or ricotta), 1 egg, 50 grams of sugar, and 1 pinch of vanilla. Mix until smooth.

  3. Divide the dough into 6 equal parts. Roll out each portion into a thin layer about 3–4 mm thick. Line a cake tin with parchment paper and place one piece of rolled-out dough inside. Add 2 spoons of the cottage cheese mixture to the center of the dough. Fold the edges of the dough to cover the filling. Repeat for the remaining portions.

  4. Preheat the oven to 180°C (356°F). Bake the assembled cakes for 30–35 minutes or until golden brown.
