Directions

1. Step

Chop the dried fruits into small pieces and place them in a bowl. In a saucepan, combine tea leaves, water, cane sugar, and rum (if using). Heat until the sugar dissolves. Add the chopped fruits to the warm syrup, mix well, and set aside to soak.

In a mixing bowl, beat the butter, cane sugar, and salt until smooth. Add eggs one at a time, mixing well after each addition. Sift in rice powder and baking powder, then mix until combined. Fold in the soaked dried fruits along with any remaining syrup. Pour the batter into a 17cm × 6cm cake pan. Bake in a preheated oven at 170°C (340°F) for 45-55 minutes or until a toothpick inserted in the center comes out clean.

3. Step

In a small bowl, mix powdered sugar and lemon juice to form a smooth glaze. Drizzle the glaze over the cooled cake. Garnish with pistachios, dried raspberries, and edible golden leaves.
