Directions

1. Step

Grate the sweet potato and place it in a bowl. Add water and let it soak for 10 minutes to remove excess starch. After 10 minutes, drain the water, reserving the starch in a separate bowl. Keep the sweet potato in another bowl.

2. Step

Add 1 tablespoon of wheat flour to the sweet potato. You can also use the reserved starch as a substitute for flour. Mix well, ensuring the sweet potato is evenly coated with the flour.

3. Step

Heat a pan over low heat and add a little oil. When the oil is hot, place the sweet potato mixture in the pan and gently press it down with a spoon to form pancakes. Cook until golden brown on one side, then flip and cook until golden brown on the other side. Once both sides are golden, place mozzarella slices on one side of the pancakes. Add cheddar cheese slices on top, then fold the pancake in half. Continue cooking until the cheese melts. Remove from the pan and set aside.

4. Step

In a small bowl, combine minced garlic, mayonnaise, honey, milk, and lemon juice. Mix well until smooth.

5. Step

Serve the cheesy sweet potato pancakes warm with the garlic mayo sauce on the side.
