Directions
1. Step
In a bowl, mix 220g all-purpose flour (or wheat flour), 3g salt, 60ml hot water, and 65ml cold water. Knead into a dough, cover, and let it rest for 15 minutes.

In another bowl, beat 3 eggs with 1.5g salt. Heat a pan over low heat, add 30ml cooking oil, and scramble the eggs until fully cooked. Remove from heat and set aside.

In a separate bowl, mix the chopped chives with 15ml cooking oil. Add the scrambled eggs and mix well.

Knead the dough again and divide it into 6 equal parts. Roll each part into a ball, cover with plastic wrap, and let them rest for 10 minutes.

Mix the chives with 3g salt and 8g oyster sauce.

Roll out one dough ball into a thin circle using a rolling pin. Spread the chive and egg mixture evenly on top. Carefully wrap and seal the dough as shown in the video.
