Directions
1. Step
Soak 5 g of sheet gelatin in a bowl of cold water until softened.
2. Step
In a bowl, mix the unsweetened yogurt and 30 g of granulated sugar until combined. In a saucepan, heat the milk with the remaining 20 g of granulated sugar, stirring until dissolved. Remove from heat and add the softened gelatin, stirring until fully melted. Combine the milk mixture with the yogurt mixture, stirring well. Pour the mixture evenly into small serving bowls and set aside.
3. Step
Soak 1 g of sheet gelatin in a bowl of cold water. In a saucepan, heat 120 ml of water with 20 g of granulated sugar until the sugar dissolves. Add the softened gelatin and stir until fully melted. Soak the salted cherry blossoms briefly in the liquid, then remove and arrange them on top of the yogurt mixture. Pour the jelly mixture over the yogurt until the cherry blossoms are just covered.
4. Step
Allow the dessert to set in the refrigerator for a few hours before serving.
