Directions

1. Step

Finely chop the green onion and place it in a bowl. Finely chop the kakdugi (radish kimchi) and place it in a bowl. Finely chop the kimchi and set it aside.

2. Step

Heat cooking oil in a pan and add the chopped green onion. Sauté until golden brown. Add the chopped kimchi and kakdugi to the pan, and stir-fry. Add 1 tsp of red chili powder, mix well, and cook until combined.

3. Step

Add the cooked rice to the pan and stir-fry well. Season lightly with salt and mix thoroughly. Push the mixture to one side of the pan, then add 1 tsp soy sauce to the empty space. Let it fry lightly before mixing it into the rice mixture. Sprinkle sesame seeds and stir everything together. Transfer to a bowl.

4. Step

In a clean pan, add mozzarella cheese and let it melt completely. Pour the melted cheese over the rice mixture in the bowl. Optionally, fry a spoonful of the melted cheese until golden and crispy, then layer it on top of the dish.

5. Step

Top the dish with a fried egg if desired. Serve warm and enjoy your cheesy kimchi fried rice!
