Directions
1. Step
Chop the bananas and cook them in a frying pan with sugar, a little water, and butter until well caramelized. Transfer to a bowl and allow to cool slightly. Blend the cottage cheese with an electric mixer until smooth. Combine 18 g of gelatin with 90 ml of water. Let it bloom for 20 minutes. Melt it gently in the microwave or on the stove, then mix it thoroughly with the banana mixture. Add the banana mixture to the cottage cheese and mix until fully incorporated.
2. Step
Line the 15 x 15 cm mold with cling film. Pour the banana mixture into the mold and smooth the surface. Refrigerate for 30 minutes.
3. Step
Chop the milk chocolate and mix it with the hot cream until smooth. Mix 4 g of gelatin with 20 ml of water, bloom for a few minutes, then melt and incorporate into the chocolate mixture. Pour the chocolate mixture over the banana layer in the mold. Smooth the surface and refrigerate for another 30 minutes.
4. Step
Refrigerate the assembled dessert for at least 12 hours. Remove the dessert from the mold, slice it into pieces, and serve chilled.
