Directions
-
Peel, core, and chop the apples into small pieces. In a pan, combine the chopped apples, 2 tablespoons of sugar, 1 teaspoon of cinnamon, and 1 tablespoon of butter.Cook over medium heat until the apples soften. Set aside to cool.
-
In a mixing bowl, combine 280 grams of flour, 1/2 teaspoon of baking powder, and 80 grams of butter. Mix with your hands until the mixture resembles coarse crumbs.
-
In another bowl, whisk together 200 grams of yogurt (or sour cream), 1 egg, 2 tablespoons of sugar, a pinch of vanilla, and 1 teaspoon of salt. Gradually add the flour and butter mixture to the wet ingredients. Knead gently with your hands until you form a soft dough.
-
Divide the dough into 4 equal portions. Roll out one portion into a thin circle and cut it into 8 triangular sections (like a pizza). Place a small amount of the cooked apple filling at the wide end of each triangle. Fold the triangle over the filling twice to seal it. If the dough sticks, lightly dust with flour. Repeat with the remaining dough and filling. Arrange the pastries on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (356°F) for 15 minutes or until golden.
-
Remove the pastries from the oven and allow them to cool slightly. Sprinkle with powdered sugar before serving.
